chocolate lava crumble cookies

chocolate lava cookies

Ingredients: 

For the Cookie Dough:  

  • 230g unsalted butter, softened  
  • 150g granulated cane sugar  
  • 110g brown sugar  
  • 2 large eggs  
  • 1 tsp vanilla extract  
  • 360g plain flour  
  • 1 tsp. baking soda  
  • ½ tsp. baking powder  
  • ½ tsp. fine sea salt  

To make the Chocolate Chip version:  

  • 180g finely chopped Tony Chocolonely chocolate of choice   

To make the Fudgy Brownie version:  

  • 50g Tony Chocolonely Melted Chocolate of Choice  

For Stuffing:  

  • 12 Tony's Chocolonely Tiny Tony's, for stuffing  

Instructions: 

  1. To make the dough: in the bowl of a stand mixer fitted with the paddle attachment, combine the softened butter and sugars. Beat for 2 minutes.  
  2. Add the eggs and vanilla. Beat another 2 minutes. 
  3. In a large bowl, mix the flour, baking soda, baking powder, and salt together. Pour into the stand mixer bowl and mix just until combined.  
  4. To Make the Chocolate Chip Version: Add the finely chopped chocolate and mix again just until combined (no flour clumps).  
  5. To Make the Brownie Version: Add the melted chocolate and mix just combined (no flour clumps).  
  6. Cover and chill in the fridge 15-30 minutes.  
  7. To bake: preheat oven to 180°c, line 1-2 large baking pans with parchment paper.  
  8. Using 2-3 tablespoons of cookie dough per cookie, flatten out the cookie dough in your hands, add a Tiny Tony’s Chocolate in the centre, then pinch the edges together and roll in between the palm of your hands to seal it in.  
  9. Place the chocolate stuffed cookie dough balls on the prepared pan.  
  10. Bake for Bake for 15-18 minutes, until just beginning to be golden brown on top.  
  11. Let the cookies cool on the pan for at least 5 minutes before enjoying!
