chocolate lava cookies

Ingredients:
For the Cookie Dough:
- 230g unsalted butter, softened
- 150g granulated cane sugar
- 110g brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 360g plain flour
- 1 tsp. baking soda
- ½ tsp. baking powder
- ½ tsp. fine sea salt
To make the Chocolate Chip version:
- 180g finely chopped Tony Chocolonely chocolate of choice
To make the Fudgy Brownie version:
- 50g Tony Chocolonely Melted Chocolate of Choice
For Stuffing:
- 12 Tony's Chocolonely Tiny Tony's, for stuffing
Instructions:
- To make the dough: in the bowl of a stand mixer fitted with the paddle attachment, combine the softened butter and sugars. Beat for 2 minutes.
- Add the eggs and vanilla. Beat another 2 minutes.
- In a large bowl, mix the flour, baking soda, baking powder, and salt together. Pour into the stand mixer bowl and mix just until combined.
- To Make the Chocolate Chip Version: Add the finely chopped chocolate and mix again just until combined (no flour clumps).
- To Make the Brownie Version: Add the melted chocolate and mix just combined (no flour clumps).
- Cover and chill in the fridge 15-30 minutes.
- To bake: preheat oven to 180°c, line 1-2 large baking pans with parchment paper.
- Using 2-3 tablespoons of cookie dough per cookie, flatten out the cookie dough in your hands, add a Tiny Tony’s Chocolate in the centre, then pinch the edges together and roll in between the palm of your hands to seal it in.
- Place the chocolate stuffed cookie dough balls on the prepared pan.
- Bake for Bake for 15-18 minutes, until just beginning to be golden brown on top.
- Let the cookies cool on the pan for at least 5 minutes before enjoying!
